Rasberry-lemon delight

Serves 1

1/4 cup part-skim ricotta cheese
1/4 cup raspberries
1 teaspoon lemon juice
1/4 teaspoon grated lemon peel
1 drop vanilla extract
4 drops stevia, or Splenda to taste

  • Mix the ricotta cheese, raspberries, lemon juice, lemon peel, and vanilla extract together in a small bowl, mashing the berries with a fork. Add sweetener to taste.
  • Per serving: calories 104, protein 7 g, carbohydrates 7 g, fiber 2 g, fat 7 g (monounsaturated 1 g, polyunsaturated trace, saturated 3 g), sodium 77mg
